LowLine: An Underground Park on NYC’s Lower East Side
What is the LowLine?
We want to transform an abandoned trolley terminal on the Lower East Side of Manhattan into the world’s first underground park. It will be a new kind of public space, using solar technology for natural illumination, and cutting edge design to capture and highlight a very special industrial space.
Stuffed Green Peppers
Ingredients:
- 6 Large Green peppers
- 1 Lb beef, Ground
- 1/2 Cup onion, Chopped
- 16 Oz Tomatoes, undrained & cut up
- 1/2 Cup Long-grain rice
- 1/2 Cup Water
- 1 Tsp Salt
- 1 Tsp Worcestershire sauce
- 2 Tbl parsley, Dried
- 1 1/2 Tsp basil, Dried
- Spaghetti sauce
- Preheat oven to 350. Cut tops from green peppers; discard seeds and membranes. Chop enough of the tops to make 1/4 cup, set aside. Cook the whole green peppers, uncovered, in boiling water for 5 minutes, invert to drain well. In a skillet, cook ground beef, onion and the 1/4 cup chopped green pepper until meat is browned and vegetables are tender. Drain off excess fat. Add undrained tomatoes, uncooked rice, water, salt, Worcestershire sauce, dash pepper, parsley, and basil. Bring to a boil; reduce heat. Cover and simmer 15 minutes or until rice is tender. Stuff peppers with meat mixture. Cover tops with spaghetti sauce and bake uncovered for 30 to 35 minutes.
*Edit: After personally making this, I would suggest adding chopped green chilie’s because it needs some kind of kick to it. Or perhaps a cilantro chutney for dipping sauce.
